1 cup cooked rice 1/2 tsp parsley
1 eggplant (peeled & sliced) 1/2 tsp basil
2 small tomatoes chopped salt
1 green pepper chopped pepper
1 med. onion chopped
1 ear corn (or frozen)
Combine all ingredients and place in casserole dish.
Pour 1/4 cup melted butter on top.
Cover and Bake at 350 degrees for 40 minutes. Take out and stir.
Sprinkle 1/3 cup parmesan or cheddar cheese on top and bake 5 more minutes.
